Ramps / Wild Leeks – 1/4 lb Bunch
This wild herb is what chefs spends their entire winter pining after, while they peel beet after beet and try together creative with their potato game. Ramps, also known as wild leeks have the most distinctive flavour, similar to onions, chives or wild garlic, but so incredibly amplified and all their own. Blanch them in boiling salted water to make a bright green pasta sauce, or blitz them into butter or oil to preserve their flavour for use all year long.
