This restaurant-grade version is made from organic ingredients and steeped with kombu for 48 hours to unlock a world of depth and flavour. It’s built on 10 years of flavour research at the Momofuku Culinary Lab, now available to home cooks for the first time. The result is a richer, rounder soy sauce that's perfect on braised meats, marinades, and all the classics like sushi.
